Ingredients

  • 1 lb sage flavored breakfast sausage
  • 3 c shredded potatoes, drained and pressed
  • ¼ c butter, melted
  • 12 ounces mild Cheddar cheese, shredded
  • ½ c onion, shredded
  • 1 (16 oz) container small curd cottage cheese
  • 6 jumbo eggs

Instructions

  1. Start by preheating your over to 375 degrees. While the oven is heating- chop your onion and prepare your potatoes. Lightly grease your 9x13 baking dish.
  2. Cook your sausage over medium-high heat until browned and crisped to your liking. Drain excess fat and crumble.
  3. Time to build your dish! Stir together the shredded potatoes and melted butter in your prepared baking dish and cover the bottom and sides with the mixture. In a large bowl, mix together the sausage crumbles, cheddar cheese, onions, cottage cheese, and eggs. Pour over your potato-mixture crust.
  4. Set your oven timer for 1 hour. Check to make sure it is done with the toothpick test (insert a toothpick into the center- if it comes out clean, it is done!) Let the dish cool for about 5 minutes, cut into squares, and serve!
