  • Chicken– One pound of boneless, skinless chicken breasts are used for this recipe. You can also use boneless, skinless chicken thighs if desired.
  • Cream of chicken soup– 2 cans of condensed soup are needed for a thick and creamy soup base.
  • Salsa– Use 1 cup of your favorite salsa. If you want the soup spicy, use hot salsa.
  • Corn– 2 cups of frozen corn or you can use canned whole-kernel corn (drained).
  • Black beans– Use one can of black beans but make sure to rinse and drain them before adding.
  • Water-1 ½ cups water is needed for the right soup consistency. You could also use low-sodium chicken broth.
  • Spices-1 teaspoon of cumin and ½ teaspoon of dried cilantro are used to flavor the soup. You can also garnish it with fresh cilantro.
  • Cheese-1 cup of shredded cheddar cheese is added at the end for creamy, cheesy soup.

  1. Lightly spray the inside of the crockpot with nonstick cooking spray. Place the chicken breasts in the crockpot.
  2. In a medium mixing bowl, add cream of chicken soup, salsa, corn, black beans, water, cumin, and dried cilantro. Stir to combine. Pour the mixture over the chicken.
  3. Cook on low for 6 hours. Take the chicken out and shred it using two forks. Place the chicken back into the crockpot. Add the shredded cheese. Stir and continue cooking until the cheese is melted (15-20 minutes).
  4. Add your favorite toppings and serve.
