Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 teaspoon dried oregano
  • 3 teaspoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cup cherry tomatoes, halved
  • 3 cups baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • Lemon wedges, for serving

Instructions

  1. Heat oil in a skillet in medium heat. Season chicken with salt, pepper, and oregano and add to the skillet. Cook chicken for 8 minutes on each side until golden. Remove the chicken and set it aside to rest.
  2. In the same skillet, keep on medium heat and add butter. Allow butter to melt before adding garlic. Cook for 1 minute. Stir in cherry tomatoes and cook until the beginning to burst and the skin looks wrinkled. Season with salt and pepper. Add spinach and stir until the spinach begins to wilt.
  3. Add heavy cream and Parmesan before bringing the mixture to a simmer. Once achieved, reduce heat to low and allow the sauce to
