Simple ingredients like mushrooms, red onion, bell pepper, pineapple, and chicken cubes look like exotic food from some island when cooked in skewers on the grill.

Hawaiian Chicken Kabobs ingredients:

  • Boneless, skinless chicken breasts are my favorite, but you could also use boneless, skinless chicken thighs.
  • Pineapple cut into 1-inch cubes is perfect for skewers
  • Red onion. I like the color and flavor of red onion for kabobs
  • Bell peppers. Use different colored bell peppers to make your kabobs look extra special.
  • Mushrooms cut in half look amazing on skewers. Use white or brown baby Bella.
  • Pineapple juice. You can use store-bought, or make it yourself by blending the leftover pineapple chunks with a little water and straining the juice.
  • 1 package of KC Masterpiece BBQ sauce and dry rub will be mixed with pineapple juice to make the most amazing bbq sauce.
  • Tabasco. Just a couple of teaspoons to give the sauce a little spice. You can omit it if you will serve it to kids.

How to make Hawaiian Chicken Kabobs:

These pineapple chicken kabobs are bathed in the most delicious mixture of pineapple juice and barbecue rub that just makes them extra special. So start gathering up your ingredients and let’s make chicken kabobs with pineapple!

  1. Preheat the grill. Prepare the veggies and pineapple by dicing them roughly the same size (about 1-inch squares). Slice the mushrooms in half.
  2. Cut the chicken breasts into 1-inch cubes and place them in a bowl.
  3. Mix the pineapple juice and Tabasco sauce with the packet of BBQ sauce and dry rub, add half of it to the chicken and mix it up. Do not let the chicken marinate in the juice, assemble the skewers immediately. Pineapple juice can make chicken mushy very quickly.
  4. Place ½ mushroom, three pieces of onion, one square of bell pepper, one piece of pineapple, and one chicken cube into the skewer. Repeat this two more times until the skewer is full. Season with salt and pepper.
  5. Brush the skewered veggies, pineapple, and chicken with the remaining sauce and place on the hot grill. Cook for 5 minutes on each side until completely cooked.

What Seasoning For Chicken Kabobs?

You can either use store-bought BBQ sauce or make your own. For this recipe, we are making our own sauce by mixing pineapple juice with KC Masterpiece bbq sauce and dry rub. You can use any flavor of dry rub you want. I recommend using the Sweet Honey flavor.

Can I Bake Chicken Kabobs Instead of Grilling?

Yes, you can. Preheat the oven to 450 F. Place a cooling rack on top of a baking sheet and you have a makeshift grill!

If you don’t own a cooling rack, place the kabobs on the baking sheet. Cook them for 20 minutes, then broil them for 5 minutes on each side to brown the chicken and veggies.

Ingredients

  • 2 large boneless, skinless chicken breasts cut into 1 inch cubes
  • 6 baby bella mushrooms, sliced in half
  • ½ green bell peppers, cut into 1 inch pieces
  • ½ yellow or orange, cut into 1 inch pieces
  • 12 -1 inch pieces of pineapple
  • ½ red onion, cut into roughly 1 inch pieces
  • 1 cup pineapple juice
  • 1-2 teaspoons Tabasco sauce
  • 1 packet KC Masterpiece BBQ sauce and dry rub

Instructions

  1. Preheat the grill or the oven to 450 F.
  2. Prepare the veggies and pineapple by dicing them roughly the same size, in about 1-inch pieces. Slice the mushrooms in half.

  3. Make the sauce by mixing the pineapple juice, and the Tabasco sauce with the packet of BBQ sauce and dry rub. Place the chicken cubes into a bowl and mix them with half the sauce. Do not marinate the chicken in the sauce. Use immediately. Pineapple makes chicken mushy very quickly.

  4. Assemble the skewers by placing half a mushroom, three pieces of red onion, one piece of bell pepper, one pineapple piece, and one chicken cube. Repeat this two more times until the skewer is full. Do not overfill the skewer or the chicken will not cook properly. Brush the skewers with the remaining sauce. Season with salt and pepper.

  5. Place the skewers on the hot grill and cook for 5-8 minutes on each side or until the chicken is cooked through.
