Ingredients

  • 1 lb fresh okra, trimmed and cut lengthwise in half
  • 3 tbsps olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat the oven to 400°. Wash, trim, and cut your okra in half lengthwise.
  2. While you're over is pre-heating, toss the okra with oil, salt and pepper. Place the okra cut side up on a 15x10x1-in. baking pan. Don’t worry about crowding the pan- it will shrink as it cooks!
  3. Roast for about 12-15 minutes- until Okra is tender and the bottoms are lightly browned. Enjoy!
