- 2-1/2 c uncooked yolk-free noodles
- 1/3 c sliced fresh mushrooms
- 1/3 c chopped onion
- 1 tbsp olive oil
- 1-1/4 c reduced-sodium beef broth
- 6 oz deli roast beef, cubed
- 1/8 tsp pepper
- Start with cooking your noodle according to its packaging directions. Make sure the water is brought to a boil first and add some salt to the water to lock it into the pasta.
- While waiting for the pasta place oil in a large skillet. Now you can start sauteing the mushrooms and onion till they are tender.
- When the vegetables are tender add the broth, roast beef, and peppers. Bring the whole thing to a boil and then reduce your heat so it comes to a simmer for 10 minutes. Leave uncovered.
- Once noodles are done drain them and put them in desired portions on plates. Take the pan of vegetables and meat and pour it on top of your noodles.
