Ingredients

  • 2-1/2 c uncooked yolk-free noodles
  • 1/3 c sliced fresh mushrooms
  • 1/3 c chopped onion
  • 1 tbsp olive oil
  • 1-1/4 c reduced-sodium beef broth
  • 6 oz deli roast beef, cubed
  • 1/8 tsp pepper

Instructions

    1. Start with cooking your noodle according to its packaging directions. Make sure the water is brought to a boil first and add some salt to the water to lock it into the pasta.
    2. While waiting for the pasta place oil in a large skillet. Now you can start sauteing the mushrooms and onion till they are tender.
    3. When the vegetables are tender add the broth, roast beef, and peppers. Bring the whole thing to a boil and then reduce your heat so it comes to a simmer for 10 minutes. Leave uncovered.
    4. Once noodles are done drain them and put them in desired portions on plates. Take the pan of vegetables and meat and pour it on top of your noodles.
    5. Place a scoop of sour cream on top and garnish with parsley!
