The olives are slightly briny, and the cheese is extra gooey.
If you only have tortilla chips in the pantry, use those in place of corn tortillas, they soften in the enchilada sauce.

9. Crock-Pot Broccoli Cheddar Chicken Casserole

Another great keto option, this keto chicken bacon ranch casserole is simple and straightforward to make and because of that, this has become one of my favorite keto chicken casserole recipes.

Adding in the swiss cheese is like the cherry on top. I don’t recommend making many if any, substitutions to this recipe. It’s delicious the way it is!

King ranch chicken casserole is a classic Texas potluck favorite! It has the slightest resemblance to a chicken enchilada casserole, but with a different twist.
The addition of Rotel and bell pepper add freshness and bite.
If you like it extra spicy, try adding some diced jalapeno in with the bell peppers.
Instead of rolling the corn tortillas, you cut them into small pieces and mix them in through the entire casserole.
Of course, there is a stretchy, cheesy topping that makes it homey.

What I love when I make this is it’s truly an all-in-one dish.
