Ingredients

  • 1 cup plain Greek yogurt or sour cream
  • 1 tbsp. Dijon mustard
  • 3 garlic cloves, minced or pressed
  • 8 chicken drumsticks (4 oz. each), skin removed
  • 1/2 cup flour
  • 1 and 1/2 tsps. paprika
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1-2 tablespoons of neutral oil

Instructions

  1. In a large bowl or baking dish, combine Greek yogurt, mustard and garlic. The Greek yogurt might be stiff if cold, so work well to combine.
  2. Add chicken and coat evenly in the yogurt mixture.
  3. Cover the entire dish with plastic wrap and refrigerate for at least 8 hours or overnight.
  4. Once the chicken has rested, preheat the oven to 425° F. Prepare a baking sheet with oil and set aside.
  5. In another medium bowl or baking dish, mix together the flour, paprika, baking powder, salt and pepper. Use a whisk or fork to ensure the seasonings are distributed in the mixture.
  6. Remove chicken from yogurt marinade one piece at a time. Add to seasoning mixture and toss to coat completely.
