Ingredients

  • 2 tablespoons. butter
  • 2 large carrots
  • 1 stalk celery
  • Kosher salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 tablespoon. all-purpose flour
  • 1 1/2 pound. boneless skinless chicken breasts
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 3/4 pound. baby potatoes, quartered
  • 3 cups. low-sodium chicken broth
  • Freshly chopped parsley

Instructions

    1. Gather all of your ingredients and chop the vegetables.
    2. Melt the butter in a large pot over medium heat. Once the butter is completely melted, add the celery and carrots. Cook them until tender, seasoning with salt and pepper. Add the garlic later and cook for about 30 seconds.
